What we're brewing: Louise's peachy pale


I don’t know about you but I’m so happy it’s just about still summer! And the great weather we’ve had so far this year means the shops are laden with so many delicious fruits. Unsurprisingly, this made me think about making a beer with them. Cherries, apricots, mangos…the possibilities are endless! I love it when craft breweries add interesting fruits to their brews, and the timing of the fruit addition can enhance different elements of their flavour. But whilst its great sampling the available options, I wanted to make a beer that sums up MY summer, and for that there’s only one fruit – the peach. Specifically, I wanted to recreate a beery form of one of my favourite summer dishes – roasted peaches.

To keep the beer light and really highlight the roasted peach flavour, I decided to make a pale summer ale. I didn’t add the peaches to the boil as I wanted to keep the ‘fresh’ taste of fruit – there is some evidence showing that adding flavours like fruits and spices during or before active fermentation can cause changes to their flavours (this is known as biotransformation).

So the peaches are going in after fermentation. There are several different ways you can add fruit to beer after fermentation. The most important factor is to make sure that the fruit is sterile, so the taste remains clean and it doesn’t sour. You can add whole fruit, pureed, frozen, boiled or canned, but for this brew I’ll add roasted peaches. I love the intense flavor of roasted fruits and think it will be a great way to bottle the summer! To balance out the roasted fruit, I added crystal malt to the grain bill. Crystal malt is kilned after the malting process, which caramelises the sugars in the grain. Adding it to my peach beer will give a honey-sweet flavour, as well as increasing the body and head retention.

As I write this, the beer is busily fermenting, so it’ll be a little while until I get to taste it (the worst thing about brewing is the patience it requires!), but I’ll update you soon about how it turned out.
